At present, the almost ubiquitous variety in Rwanda is Red Bourbon. This is an exciting and rare opportunity to examine the relationship between a coffee variety and its terroir. Yellow Bourbon is a subtype of the Bourbon family, where the fruit ripens to a yellow, instead of the typical red or pink hues of others in the family. It’s mainly found in Brazil where it was first grown, and we are very excited to offer this variety grown in the Rwandan terroir.

All cherry for this lot was hand-sorted and then floated. Once the cherry was meticulously sorted and cleaned, the cherries were laid out evenly across raised beds, providing consistent airflow. The cherry was dried for 30 days, turned constantly when the sun was high, and covered overnight.
