Nzinza which means ‘good’ in Kinyarwanda is a Typica / Bourbon hybrid that shows a high tolerance against coffee leaf rust disease. It is a variety that is comfortable in cooler climbs, which grows high and wide and appears to be perfectly suited to the climate at Shyira.
At present, the almost ubiquitous variety in Rwanda is Red Bourbon. This is an exciting and rare opportunity to examine the relationship between a coffee variety and its terroir.
For this lot, cherry was hand-sorted, floated, re-sorted, and floated again to ensure only the highest quality coffee would undergo processing. The coffee was then pulped, and the parchment coffee was placed in a concrete fermentation tank for 12 hours. During this time, the fermenting parchment was agitated several times in a ceremonial foot-stomping.
After fermentation, the parchment was released for a final washing into a serpentine grading channel. This channel sorted parchment into different density and quality grades. During this process, parchment is continuously agitated to encourage lower density beans to float, and be separated from the higher density, higher quality beans. The washing also serves to clean any remaining residue from the parchment.
The highest density beans were then moved to a pre-drying area. Here, the parchment was sorted by hand to remove any defective or undesired beans. Finally, the parchment was laid out to sun dry on raised beds, turned daily for an average of one month, and covered every night to retain heat.

The auction is conducted in USD, payment for winning lots will be made directly to Raw Material Coffee CIC in the United Kingdom within 14 days of the auction closing and prior to coffee being shipped. Payment can be made in USD or in GBP, EUROS or AUD at an agreed rate of exchange.
