About this item
The soft character of 2nd fills gives scope for more spirit balanced, less wood heavy whiskies where the Starward spirit can really shine and give great depth. The addition of a 1st fill added caramel and some pop. Stylistically, more Speyside (soft, fruit, balance), less bourbon (wood, sweet).
This project is one of the last to be released from Essendon Fields, and the blend has great depth over time, pulling on spirit and wood handled by the many distillers that have passed through New World Whisky Distillery. It is an homage to this site and the whisky it has produced.
Vibrant aroma with soft dried fruits, figs, apples and honey. Palate is silky with gingerbread spices, mild oak, honey and toffee. Great mouthfeel and long finish, surprisingly approachable for a cask strength whisky with a low perception of alcohol or booziness. Delicious.
Released September, 2016. Cask Strength ABV 62.3%.
